Irish Soda Bread

I made this for our St. Patty’s Day Potluck Dinner. Turned out fanTASTIC and it wasn’t difficult to make at all!

1 2/3 cups all-purpose flour
5 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
1 cup buttermilk
1/4 cup butter, melted and still warm

Whisk together first 5 ingredients.

In a separate bowl, whisk together the last 3 ingredients.

Add buttermilk mix to the flour mix and stir until the dry ingredients are moistened. The batter will be stiff but sticky. Scrape the batter into the greased loaf pan and spread evenly. Use a sharp knife to slash a large x about 1/2 an inch deep on top of the batter. Bake at 350 degrees for about 45-50 min until golden brown on top.
