This is the first thing I ever remember cooking on my own. I found it in a Kraft cookbook at the library and it looked easy, so I tried it out!
Super delicious and easy; takes a little long to cook, but it’s totally worth it, and once you finish the 10 min prep, you just pop it in the oven.
1 can peach slices
1 pkg (6 oz) stuffing (I use Stove Top Chicken flavor)
1/4 cup butter, cut into pieces
6 pork chops, 1/2 inch thick
1/3 cup peach or apricot preserves (PB&J section of the grocery store)
1 tbs dijon mustard
Preheat oven to 375 degrees.
Drain peaches, reserving syrup. Add enough hot water to make 1 1/2 cups. Mix the syrup mixture, butter, and stuffing in a bowl until butter is melted. Stir in peaches (I like to chop them into chunks instead of keeping them in slices). Let stand 5 minutes.
Spoon the stuffing mixture into a 9×13 pan. Lay the pork chops on top of stuffing. Mix the preserves and mustard, spread on chops.
Bake 40 minutes, or until chops are cooked all the way.
