Heather’s Super Yummy Rice Dish

Ingredients:
1 pack Uncle Ben’s 90-second rice (I used Chicken flavored)
Olive Oil
2 eggs
1 cup frozen mixed vegetables (put in a strainer and run cold water over them to remove the ice)
~12-15 shrimp (or 1 can of tuna)
Optional: Green onions, garlic, soy sauce

Preparation:
Cook the rice according to directions on the package, let cool for a bit.

Heat 2 tbs oil in a frying pan. Once hot, add the eggs, and lightly scramble them (don’t let them get too dry). Remove eggs and set aside.

Add a little more oil, saute the veggies and shrimp (and onions/garlic if you want) in the pan. Once they’re heated up to your liking, add the rice and egg (and tuna, if you’re subbing that for the shrimp). Keep stirring until the rice is hot again.

Serve with soy sauce!!
