Light Eggs Benedict

I had never had Eggs Benedict until this.  I still need to for reals try it, but this was amazing.  Seriously, this was delicious.

Ingredients:

2 Trader Joe’s Fat Free English Muffins, split in half
4 slices of low fat ham
5 large eggs
1 tbs butter or margarine
3/4 C low fat or fat free lemon flavored Greek Yogurt (like Chiobani)
1 tbs low fat mayonnaise
1/2 tsp salt
Pepper

Preparation:

Toast the English muffin and put on two plates.  Brown ham in a small frying pan over medium heat, turning once, about 4 minutes total. Put 1 slice on each muffin half. Poach 4 eggs.

Stir together butter, yogurt, remaining egg, mayonnaise, and salt in a small bowl. Pour into saucepan over low heat, and whisk often until just warmed (be careful not to overcook the sauce, as it will curdle).

Top muffins with poached eggs, pour some sauce over them, and serve any extra sauce on the side. Sprinkle with pepper, and feel free to add the chives.
