Veggie Patties

These were kind of a random test.  I came across this recipe in an old Simple & Delicious magazine, thought it was interesting, I had all the ingredients already, so I tried it.  I ended up thinking these were DELICIOUS.  And low cal.  I think they’d be a really great burger patty alternative, actually.

Veggie Patties from Taste of Home (with Havarti cheese)


3/4 C yellow squash (I did half zucchini, half yellow squash)
1/2 C grated peeled potato
1/4 C shredded carrot
3 tbs flour
2 tbs cornmeal
2 tbs beaten egg (I recommend subbing Egg Beaters)
1 tbs minced onion
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp pepper
1 tsp olive oil


In a small bowl, combine the first 10 ingredients.  Shape into four patties.  In a large skillet, cook the four patties in oil for 3-5 minutes each side over medium heat, or until golden brown.  Serve immediately.

I recommend ketchup & cheese, or honey mustard and a little paprika.  Or try on burger buns.
