Lamb Chops with Arugula Pesto – 25 Days of Christmas: Day 10

Happy Birthday to meeeeeee!!!!

In honor of my birthday, I am posting a recipe using my absolute favorite meat.  LAMB.  Sorry animal lovers, it’s delicious.  I know it’s a baby.  BUT IT’S SO DELICIOUS!

This one is easy.  Throw some stuff in a blender, saute some chops, and you have a tasty dinner.  Woot!

Lamb Chops with Arugula Pesto

2 lamb chops per person
Flour
Olive Oil
5 oz arugula
1/2 C walnuts
1/2 C Parmesan cheese
1/2 C olive oil
Salt & Pepper

Throw the arugula, walnuts, cheese, olive oil into a blender.  Salt & pepper to taste.

Heat a saute pan to medium heat with some olive oil.  Flour both sides of the chops and saute for a few minutes on each side, until the chop is cooked to your liking (I like medium rare).

It’s literally that easy.  And the arugula pesto will go great on other things as well.
