This blog has gone through a lot since it first started back in 2010. It started out as a cooking blog; I would post recipes I loved from other sources, and slowly started branching out to trying my own recipes, or making some changes to make favorites a little different(/better). It slowly morphed into a place where I could share my knitting projects, pictures of friends & fun, server rants, strong feelings, and healthy living updates. And I love it.
Back when I started, I took a lot of cooking inspiration from places like Hungry Girl, looking for low calorie options to swap for in higher calorie recipes. A lot of processed substitutions for natural ingredients. It’s amazing how that mentality has changed so much in the last few years! Don’t get me wrong, I still love my Laughing Cow cheese wedges (could *not* stomach the tofu noodles, sorry HG), but I am really aiming for as many whole foods as I can eat and afford these days.
That being said, it’s not easy to healthily cook for one on a budget. The v.2014 of this blog is going to be a lot of hits and misses, learning to food prep successfully, and remembering to live my life with heart.
And never going back to the Special K diet.
